The study of the reactions of oxygen with lipids is an ancient history. LAVOISIER, at the time of the French revolution, was already interested in the combustion and the oxidation at low temperature of fats and oils. These first explorations may be considered as the birth of organic chemistry.
Lipid peroxidation can be defined as the oxidative deterioration of lipids containing any number of carbon-carbon double bonds.
